Baked tomatoes topped with Parmesan and parsley. Together with a dressing made out of olive oil and balsamic vinegar it will make your taste buds dance. So simple and so much flavor.

Baked tomatoes with Parmesan


Serves 2

• 7 – 10 medium sized tomatoes
• 4 garlic cloves
• 1 tsp olive oil
• Salt
• 1 tbsp olive oil
• 1 tbsp balsamic vinegar
• One piece of Parmesan
• 1 handful of parsley (or basil)

How to make the baked tomatoes

Halve the tomatoes. Place them in a baking tray with the cut side up. Pour over olive oil and crush the garlic cloves and add into the baking tray. Oven roast the tomatoes for approximately 40 minutes in 200 degrees celsius until they are caramelized and have lost some water. Remove from the oven and let cool for a few minutes. Cut as much Parmesan as you prefer into small pieces. Chop 1 handful of parsley. Dress the tomatoes with olive oil and balsamic vinegar. Add the Parmesan and the parsley and serve as it is or with some chicken, pasta or bread
