Mango, coconut flakes, lime and a little bit of sugar. mhhhmm. Just the palm trees missing, right? If I'm making this recipe again (will most definitely happen tomorrow), I'm gonna serve it with some coconut ice cream. I mean ice cream could never go wrong, especially not with warm fruit. This time I didn't have the time to go shopping for ice cream but nonetheless it turned out delicious. Recipe down below.
Caramelised mango with coconut and lime
- 1 mango, not to ripe
- 2 tablespoons of shredded coconut
- Zest from 1/2 lime
- Juice from 1/2 lime
- 1/2 - 1 tablespoon of sugar (preferably coconut sugar. If you want to skip the sugar that would work too)
How to prepare the caramelised mango
Karamelliserad mango med kokos och lime
- 1 mango, inte alltför mogen
- 2 matskedar riven kokos
- Zest från 1/2 lime
- Juice från 1/2 lime
- 1/2 - 1 matsked socker (gärna kokossocker. Sockret kan även uteslutas)
