Sometimes leftovers make the best lunches. Today I made a salad of baby spinach, smoked salmon, pickled onions, creamy bean mash and some sourdough croutons. I was about to throw that stale sourdough bread away, but hey! I thought to myself, I can always make croutons. So that's what I did.
Also, mashes beans, how good? Mashed with some lemon zest, juice, olive oil and salt and pepper. Great on toast as well. Always keep beans as a staple, they can save many dinners!
