ORANGE AND BALSAMIC GLAZED CHICKEN

Chicken glaze recipe

I’ve had a recipe in my mind for quite a while. Orange, rosemary, balsamic vinegar and honey mixed together into a glaze. Those ingredients combined with tender chicken. Sounds good doesn’t it? The other day I decided to make the idea of this chicken recipe into reality. Glad I did! It turned out delicious! I don’t know why, but everything with a glaze, always appeal to my taste buds. Glaze and I are taste-bud-buddies! Yep! The glaze has no added sugar, the small amount of honey, the orange and the balsamic vinegar bring out the sweet taste. If you’re not a big fan of rosemary you can choose another herb like thyme or oregano.

I served oven roasted vegetables with the chicken. Brown rice or quinoa would work great as well.

Ingredients
Serves 4

Orange and balsamic glazed chicken

• 4 tbsp orange juice
• 2 tbsp balsamic vinegar
• 1 tsp orange zest
• 1 tsp chopped rosemary
• 700 g chicken thighs or chicken fillet
• Salt and pepper
• 2-4 tsp honey

Oven roasted vegetables

• 4 small sweet potatoes
• 2 bell peppers
• 1 head of broccoli
• 4 carrots
• 2 shallots
• 3 cloves of garlic
• 2 tbsp olive oil
• Salt and pepper

How to prepare oven roasted vegetables

Peel the potatoes and the carrots. Cut the carrots into thin pieces and the potatoes into chunks. Quarter the shallots and cut the broccoli and bell pepper into smaller pieces. Finley slice the garlic. Mix the vegetables and onion and drizzle with olive oil. Add salt and pepper and oven roast at 200° C for approximately 30 – 40 minutes.

How to make glazed chicken

Prepare the chicken and pat dry. Add salt and pepper. Pan fry on high heat until golden. Prepare the glaze by grating orange zest and mix it with orange juice, balsamic vinegar, chopped rosemary and some salt and pepper.

When the chicken is golden lower the temperature and add the mixture. Add the honey and let caramelize. Make sure the chicken is cooked through and serve with the oven roasted vegetables, a green salad and maybe some feta or goat cheese.
